Rogan josh is an intensely rich aromatic dish of Persian origin, which is one of the signature recipes of Kashmiri cuisine. Partners well with lamb, chicken or pork.

Rogan Josh Curry. Ingredients: 1kg chicken, lamb or pork.6 onions diced, 400g diced tomatoes,1/3 pack spice blend, 1 cup water, rice to serve, salt pepper to season, dollop of yoghurt. In a large pot, brown onions. Add meat and brown for 10 minutes. Add spice, diced tomatoes and water. Bring to boil. Reduce heat and simmer for 1 hour until meat is tender. Serve with steamed rice and yoghurt.
