Mexican Meatballs in Tomato Sauce Ingredients: 500g minced meat, 1 onion diced,1 egg, 1 tbs Mexican spice blend, 2 yellow long capsicums, 1/2 cup cooked rice, large can Tomato Soup, 1 cup water. In a large bowl, mix the mince meat, egg, rice, spice and onion together until combined. Core the 2 capsicums and stuff the cavity with some of the meat mixture. Pour the can of soup into a large pot, add the stuffed capsicums and make small meatballs from any remaining mixture. Bring to boil, reduce to simmer and cook for 45 min. Serve with mashed potatoes.
