Moroccan Lamb or Chicken Casserole. Ingredients: 1 kg Lamb or chicken diced,2 cloves garlic,2 onions diced,1/2cup dried apricots, 1/4 cup pitted dates, 2 cups water,5 tablespoons orange juice, olive. In a large plastic bowl mix meat with crushed garlic, juice, 2 tablespoons oil & 1/3 pack of spice blend. Heat some oil in a large pot add diced onions & brown for 5 minutes. Add meat mixture, apricots, dates, water & simmer with lid on for 1.5 hours until meat is tender. Serve with cous cous or rice. Ingredients: cumin, coriander, paprika, garlic, onion powder, salt, herbs & spices.
