Dukkahs are full of flavour, texture and colour and very versatile in the kitchen. Dip crusty bread into oil then dukkah, coat chicken, fish or meats in dukkah and roast or bbq. Sprinkle over cooked vege's or a salad.

Ingredients: 8 eggs, 6 cherry tomato halved,1/2 onion sliced, 1 green capsicum sliced,1/4 pack Red Earth Dukkah, mushrooms, spinach leaves and thick crusty bread In a large bowl lightly beat the eggs and cherry tomato, onions and capsicum. In a fry pan scramble the eggs until light and fluffy. In a second pan, stir fry the mushrooms and spinach in a little olive oil and garlic. Serve scrambled eggs on a plate with mushrooms a sprinkling of dukkah and toasted crusty bread.
