It's hard to go past deep southern fried chicken. Recipe suggestion: Southern Kentucky Chicken Lunch. Ingredient: 4-6 chicken breast fillets, 1 egg, 100g southern chicken spice, oil for frying. Pound chicken fillets to even thickness. Beat egg in a large bowl. Dip each chicken piece into the egg and then into the spice blend until completely covered and pat down. Heat frypan on low heat with oil and gently fry chicken schnitzels until golden. Or alternatively bake in a moderate oven 180c for 15 minutes. Serve with crunchy coleslaw.
